Happy 3rd Blog Birthday to me
Yes! It's Albion Cooks 3rd Birthday today!
Thanks to all my readers. I'm looking forward to another creative year!
Over the last year, I really feel I've gained confidence experimenting with new combinations and ideas. Here's a few favorites from the last year that reflect that, while remaining simple and easy to prepare:
Cauliflower, Kale & Olive Soup
Beet Carpaccio
Bruschetta with Heirloom Tomatoes & Pate di Fiori di Zucca
Tamale-Stuffed Mini Peppers
Roasted Red Pepper & Red Lentil Soup
Brussels Sprout Pizza (Vegan)

Happy Blogiversary!
I went to Portland's first 100% vegan Italian restaurant last night and had some really interesting and delicious dishes. I forgot my camera so I can't post photos but I'll send you a link as you might get some good ideas.
Catherine, congratulations on your three-year blogiversary! You were one of the first people to comment on my blog, way back when, and I was so grateful for your enthusiasm. Here's to a wonderful fourth year of recipes and photos!
Melody - thank you! You are an inspiration!
Anna - it's been a blast!
VK - definitely send me the link!
Lydia - thank you! I can barely keep up with my reading these days, so my comments are minimal. It's always wonderful to hear those encouraging words though - I'm going to work on that this year.
Yay - happy blogiversary! Yours is my favorite food blog... when I actually got a mention a few entries down with regard to the legume leaves, I nearly swooned!
