Arugula, Pear, & Arina Goat Gouda Salad
I loved this arugula salad with sliced pear, slivers of Arina Goat Gouda, and hazelnuts! The peppery bite of the arugula was balanced by a vinaigrette sweetened with honey, the creaminess of the goat gouda and the fresh nutty flavor of the hazelnuts.
The vinaigrette was simple: just olive oil, champagne vinegar, and honey. I wondered about adding chopped shallots to the vinaigrette, but I'm glad I didn't.

My favorite combo is very close to yours: arugula, pears, goat cheese and pecans with a raspberry vinaigrette.

Oh baby, sounds wonderful. (I might have to skip the honey. I will refrain from mentioning what I'd use instead.)
Decided to clarify (lest you think I have become a low carb fanatic) that if it's only a teaspoon or so of honey, I'd just go for it.

I just had a bite of a tasty salad made by Shuna of Eggbeater yesterday. There was chicken in it, so apologies to you vegetarians, but she added cubed apple, which I thought was perfect. Shuna told me she always thinks of arugula as peppery, but I said I've always found warm, walnutty flavors in it...
And to that end, I love to dress arugula with walnut oil.
