Rosemary Roasted Cashews & Purple Cauliflower

A lovely purple cauliflower.
Purple and white cauliflower with red onions. I roasted these with a little olive oil, then added pine nuts, a little lemon juice, and topped with feta.

I wish I could find some colorful cauliflower. The closest I can get is broccoflower, which I love.
